Royal Caribbean International continues to provide its guests with the ultimate vacation experience by enhancing its onboard dining options with the addition of Oasis-class amenities to even more ships. Next in line is Serenade of the Seas, which is scheduled for an extensive revitalization this fall.
Serenade of the Seas will wow guests in December when she re-emerges from her dry dock with a new lineup of specialty restaurants, which will include Giovanni’s Table Italian restaurant, Izumi Asian cuisine and the intimate Chef’s Table dining experience, as well as dining packages for guests to enjoy all of them at incredible value. Guests will have the option of choosing the Royal Choice Dining Package, which includes dinner at Chops Grille, Giovanni’s Table and Izumi for $55 per guest, or the Chef’s Table Dining Package for $130 per guest, which includes all of the specialty restaurants as well as the Chef’s Table.

Serenade of the Seas also will offer additional dining deals at Giovanni’s Table. Groups of four or more can take advantage of the Celebration Dining Deal, which is valid for the first two nights of each sailing and allows groups of four or more to enjoy a delicious meal plus a $30 beverage credit at a cost of $20 per person. Groups of eight or more can opt for the Set Sail Dining Deal which includes dinner on the first night of their cruise for $14 per guest.

Further enhancing its onboard culinary offerings Royal Caribbean is expanding its partnership with renowned wine producer Domaines Barons de Rothschild by offering the exclusive Lafite Wine Tasting Experience onboard. Available for $23 to $25 per person, depending upon ship and itinerary, the experience, which was first introduced onboard Allure of the Seas, offers guests a unique tasting showcasing the renowned vintages from France’s Bordeaux region.

Developed in conjunction with Château Lafite Rothschild, the premier estate under the Rothschild name, and Master Sommelier John Blazon, the Lafite Wine Experience aims to expand guests’ understanding of growing regions within Bordeaux. A Royal Caribbean cellar master leads the tasting, sharing details about the wines and the winemakers and the history and suggestions for food pairings.  A souvenir packet allows guests to take a piece of the experience home with winemakers’ notes, recipes and more.

The Lafite Wine Tasting Experience is now available for pre-booking on select ships, including Allure of the Seas, Oasis of the Seas, Independence of the Seas, Liberty of the Seas, Freedom of the Seas, Mariner of the Seas, Navigator of the Seas, Adventure of the Seas, Explorer of the Seas, Jewel of the Seas and Enchantment of the Seas.

The Azure of the Seas Features New Restaurants

Showcasing onboard experiences all her own, Royal Caribbean International’s Allure of the Seas, the world’s next largest and most innovative cruise ship debuting in December 2010, will introduce new culinary concepts and tempting twists to signature Oasis-class restaurants. A Brazilian steakhouse will be a destination restaurant that comes to life for dinner service in the Solarium, featuring authentic Brazilian-style meats and seafood dishes, from Picanha cut sirloin steak to Atlantic salmon marinated with sea salt and garlic, served table-side and sliced straight off the skewer. In Central Park, recently anointed Chef de Cuisine Molly Brandt will present guests with a one-of-a-kind menu and distinct dining experience at Allure of the Seas150 Central Park, a signature fine dining experience.

“As churrascaria concept restaurants gain popularity on land, Royal Caribbean is taking advantage of having a new ship to introduce a Brazilian steakhouse and bring a new dynamic and colorful nightlife ambiance for adults in the Solarium,” says Lisa Bauer, senior vice president, Hotel Operations, Royal Caribbean International. “Guests onboard Allure of the Seas will have a new arrangement of dining experiences throughout the ship, from the Adagio Main Dining Room to new venues on the Boardwalk and Royal Promenade.”

Combining the best of classic Mexican beach bars and Southern California’s famed taquerias, Rita’s Cantina will be a vibrant new restaurant in the Boardwalk neighborhood. Adults and kids alike will enjoy some of their favorite Mexican fare, such as shrimp ceviche tostadas, warm tortilla chips with salsa and fiesta guacamole, as well as entrées, such as fajitas, fish tacos and Chipotle-style flautas. The more casual setting will be a favorite lunch, snack or dinner spot for guests seeking a flavorful fiesta onboard Allure of the Seas. Rita’s Cantina also will boast some of the best and widest selection of margaritas at sea, offering both authentic and signature concoctions mixed with a choice from the extensive list of quality tequilas, served on the rocks or frozen in a variety of fruit-flavor combinations. In addition, the restaurant will introduce new nightlife to Boardwalk with live guitar music, drinks and dancing. Rita Cantina’s design will include large open breezeways and an outdoor seating area complete with high top tables and stools, and will be located in place of Seafood Shack onboard sister-ship Oasis of the Seas.

Also new to Boardwalk’s dynamic and engaging scene will be The Boardwalk Dog House, an outdoor hot-dog specialty counter located where The Donut Shop is on Oasis of the Seas. Guests can choose from traditional hot dogs, wieners, brats, sausages and other delicious linked meats and a variety of toppings to split a long bun. The Donut Shop will remain on Boardwalk in a new location next to the Ice Cream Parlor.

The following includes a variety of other palate-pleasing options available throughout the neighborhoods on Allure:
THE BOARDWALK

- Rita’s Cantina: A casual yet vibrant indoor/outdoor restaurant exclusively on Allure’s Boardwalk, caters to families by day, and adults by night; traditional Mexican fare, comprehensive selection of margaritas and live guitar music and dancing for evening entertainment

- Boardwalk Bar: The main bar on the Boardwalk; offering fruit, salads and sandwiches

Allure of the Seas shares the title of the world’s largest and most revolutionary cruise ship with sister-ship Oasis of the Seas. An architectural marvel at sea, she will span 16 decks, encompass 225,282 gross registered tons, carry 5,400 guests at double occupancy, and feature 2,700 staterooms. Allure of the Seas will tout Royal Caribbean’s exclusive neighborhood concept of seven distinct themed areas, which will include Central Park, Boardwalk, the Royal Promenade, the Pool and Sports Zone, Vitality at Sea Spa and Fitness Center, Entertainment Place and Youth Zone. The ship will alternate a Western Caribbean with an Eastern Caribbean seven-night itinerary from her home port of Port Everglades in Fort Lauderdale, Fla.

Keriann Von Raesfeld Named Chef fo Signature Restaurant on Oasis of the Seas

Up and Coming Talent Molds a Unique Dining Experience for 150 Central Park

Aug. 11, 2009 – Royal Caribbean International continues to deliver the unexpected for its much-anticipated Oasis of the Seas, including the choice of chef de cuisine for 150 Central Park, the ship’s signature restaurant in the Central Park neighborhood. Keriann Von Raesfeld, an award-winning, internationally acclaimed chef will be heading up the most talked about restaurant aboard the world’s largest and most revolutionary cruise ship, slated to begin sailing in December 2009. After an extensive world wide search for the most up and coming talent, Royal Caribbean discovered Von Raesfeld at the prestigious 2008 World Association of Chefs Societies (WACS) Congress in Dubai. Von Raesfeld’s extraordinary talents have earned her high profile accolades, which include being the first American and the first woman to win the honor of ‘Best Young Cook in the World’ at the 2008 WACS Congress. She also led Team USA to a first gold medal at the Scothot Competition in Scotland and was part of Team USA’s regional team that won the first ever gold medal at the Culinary Olympics held in Germany as well as part of the gold winning Team USA.

At the age of 23, Von Raesfeld will realize any chef’s lifetime goal to manage a restaurant of their own, leading a team of the best chefs in the industry. As chef de cuisine, Von Raesfeld will be a fixture in 150 Central Park, present in every aspect of the signature venue, from the day-to-day kitchen operations and the dining experience, to engaging and conversing with guests nightly.

Rather than partner with a traditional celebrity chef to lend a name to our signature restaurant, we found one that is a true star in her own right who will focus all of her attention in making the 150 Central Park experience stellar. Royal Caribbean found an authentic, hidden gem with Keriann.”

Von Raesfeld’s modern American epicurean approach, established in formal training from the Professional Culinary Institute and continuously refined through various international competitions, is founded in familiar cuisine and brought to life in original and unique ways. The distinctive style exercises a play on temperatures and textures to create dishes such as a spicy “hot” gazpacho and a Kobe steak entrée served with shitake “bacon” and a celery root purée. Other signature presentations will include Von Raesfeld’s acclaimed banana split, which requires a day-and-a-half of preparation.

Completing the gastronomic experience at 150 Central Park will be the most dynamic wine program of any Royal Caribbean restaurant. The expansive wine list, created by Master Sommelier John Blazon, will feature wine recommendations paired with the evening’s menu and presented in three “tasting tiers” based on the bottles’ price points. Guests will be able to view the ship’s extensive wine collection in a uniquely designed wine cellar, visible from within the restaurant.

Located in the lush and tropical grounds of the ship’s Central Park neighborhood,150 Central Park will feature décor that will embrace the mellow earth tones, unique textiles and fixtures inspired by nature’s four seasons. Inspired by the simple elegance concept of trend-setting restaurants in Chicago, New York and Los Angeles, each detail of 150 Central Park will be dedicated to enhancing the dining ambiance, from the tabletops to the service team uniforms. The restaurant will feature two menus per sailing, each offering a six- and eight-course option, and be open for dinner daily from 6:00 p.m. to 10:00 p.m. with a cover charge of $35.
